Umbreon is the defensive Eeveelution! Toxic can chip away at the opponents team as a coverage move. Teach it Shadow Ball and it will slowly wear away an opponents special defense. Its attack and special attack are similar, and pretty low. In Polished Crystal there are two ways to evolve Eevee into Umbreon. The first is the classic way of leveling up Eevee with high friendship at night. The second is to use a Moon Stone, which can be found in quite a few places. One of the earlier places you can also get a Moon Stone from Bill's Grandfather, where as the rest are later game. Just be careful not to level it up too much during the day and accidentally evolve it into Espeon. You can also check pokemon happiness in Goldenrod City.
