The League runs in the standard order, and every fight inside it sits between level 66 and 71 -- which is the Champion cap you earned, not a suggestion.

Karen's whole team arrives at 69-70 and Lance's at 69-71, so there is no comfortable step down at the end. Bring a real answer for Dragon and a real answer for Dark rather than one generalist carry.
The champion changes
Soulgold uses Title Defense: the Champion you face at the end is not the same trainer every time. What the table above and the data below show is Lance's registered champion team, and the League preparation is the same either way, but do not assume the last fight is identical on a second run.
